Maybe some kind of <i>Brettanomyces<\/i> yeast?  I&#8217;m going to have to autodidact myself into a better understanding of yeast ecology.  Not to mention yeast physiology &#8211; am I seeing two cells undergoing postconjugational sporulation there in the middle of the image?<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/www.bigroom.org\/images\/LLSYeast20100410Stained-02.jpg\" title=\"Nero the Yeast, after a Gram-staining.\" alt=\"Unidentified yeast cultured from the flowering parts of a Lyreleaf sage (Salvia lyrata) - Gram-stained, Brightfield,  1000X magnification\" style=\"float:right;\" \/>I&#8217;m a bit puzzled that I don&#8217;t see anything that looks much like bacteria in here.  &#8220;<a href=\"http:\/\/www.nature.com\/nrmicro\/journal\/v5\/n8\/abs\/nrmicro1711.html\" title=\"The nineteenth century roots of 'everything is everywhere'\" target=\"_New\">Everything is everywhere<\/a>&#8221; right?  And yet, I&#8217;m not seeing any obvious acetic-acid bacterial growth here.  Kind of a bummer, since that&#8217;s REALLY what I&#8217;m after here overall, but that&#8217;s okay.  I can play with Nero in the meantime.  Anybody know if you can make (palatable) leavened dough with <i>Brettanomyces<\/i> yeasts?&#8230;<\/p>\n<p>I still need to go try the same cultivation on some <a href=\"http:\/\/www.ranchflowers.com\/photoszb_combos\/indian%20paintbrush%20%26%20texas%20bluebonnets.htm\" target=\"_New\" title=\"Texas Bluebonnets and Indian Paintbrush photo at ranchflowers.com\">&#8220;Texas Bluebonnets&#8221; and &#8220;Indian Paintbrush&#8221;<\/a> flowers, since those are blooming around here now too.  I figure there&#8217;s bound to be some <i>Gluconobacter<\/i> floating around out there <em>somewhere<\/em>.
